This recipe came about because of a desire to bake with vegetables. Everybody knows baked goods made with vegetables are 100% healthy and nutritious, right? The “almost” pumpkin title comes from the fact that these whoopie pies are made with the pumpkin’s younger, more beautiful, more delicious sister – the butternut squash. Us Brits can sometimes play it safe and only tend to bake with carrots, but never other vegetables like our daring friends in the States. I want to convince you all, and myself, that delicious sweet treats can be made from vegetables such as beetroot, courgettes (zucchini to those on the other side of the pond) and pumpkin to name a few. Last week Tues I turned the big 25!! *queue the half way to 50 jokes* …I really wanted to write something deep & meaningful about passing this milestone in my life….BUT I’m drawing a blank lol. This Giant Cupcake was made for a very good friend of the family who celebrated her birthday a few weeks ago. Her name is Ruby, which is why she requested the lovely red theme for her cake. The cake is a victoria sponge, filled with raspberry jam and vanilla buttercream.
I really love the deep red colour that I achieved with the buttercream roses and as always, it is a massive confidence boost to recieve positive feedback about my cakes.
I have a running joke with a friend from the States, that all us Brits do is sit around having tea and crumpets (which is obviously not true). This post however, is very stereotypically British. Seeing as it’s the Queen’s Jubilee and all, I think it’s allowed. Continue reading →
