Happy Cinco de Mayo!

Hola amigos! (That’s about all the Spanish I know)

It’s Cinco de Mayo (spanish for 5th of May) which is a Mexican holiday celebrated in Mexico (obviously) and the United States.

As I will use practically any excuse to do some baking, I thought it made sense to try something with a bit of latin flavour.

So, first I made dulce de leche (prounounce Dool-say de Lech-ay) which is a type of caramel that is really popular in South America. This stuff is GOOD and so versatile – you can put it on almost anything; desserts, ice cream….toast!

Not really satisfied with JUST making caramel, I decided to kill two birds with one stone and make another latin-inspired recipe; Alfajores (prounounced alpha-WHORE-es). I’ve been meaning to try these for ages and what better day than today? Alfajores is a shortbread biscuit with a dulce de leche filling. So I whipped up some shortbread biscuits (as you do) and as I expected, they were AH-MAAA-ZING!
